Paleo Breakfast Muffins

Starting your day on the front foot with a nutrient dense breakfast is key to optimising your energy, mental clarity and performance (not to mention your overall health). If you are looking for a quick, easy, nourishing breakfast option that will set your foundation for the day ahead look no further than below; 

Recipe: 

(Makes 12 muffins) 

- 10-12 Eggs (free range of course) 

- 3 pieces of bacon (free range)

- Green leafy vege of choice (I like spinach or kale and have also used watercress before which was great) or any other vegetables that you like zucchini, capscium etc

- 1 x Onion (Red or Brown) 

- 1 x tomato

-1 x Clove of Garlic (Optional) 

- 1 x tsp Cumin 

- 1 x tsp Ginger

- 1 x tsp Turmeric  

Chop and combine everything into a bowl, add a pinch or two of pepper and sea salt,  mix together then pour into a muffin tray (line with butter, ghee, or coconut oil to prevent sticking and also add more nourishing nutrients) then bake in the oven on 180 degrees until cooked (usually between 20-30 mins depending on your oven). Store in fridge or freezes well.

I use these muffins when traveling and/or when I have an early morning flight to catch which gives me a nutrient dense tasty breakfast option when on the go.
